Adil Fawzi
Director of Operations
Chef/Restaurator Adil Fawzi has always had a passion for great food, fine wines and different cultures. Already at an early age, spending hours watching and helping his mother cooking delicious traditional Moroccan dishes in their kitchen in Casablanca set in motion a lifelong culinary affection. Adil would spend his summers in New York City, working at his uncle Mike’s NYC deli. It was there and then that he decided he would aspire to make it big in the world of haute cuisine.
To pursue his life goal, there was only one logical next destination: Paris, France, the culinary capital of the world. He graduated with a Master’s Degree in Culi-nary Arts and Hotel Management from Maxim’s School, one of the most prestigious culinary institutes in Paris. There, he apprenticed under Frank Charpen- tier, a 3-Michelin Star chef. Chef Adil was fortunate to have the opportunity to visit countless exclusive wine and champagne chateaux, work in 3-Michelin Star rated restaurants and land a role as chef for the foremost caterer in Paris, Le Notre & Raynier Marchetti.
Finally, in 2005, Adil returned to New York where his dream had started some 20 years before. He opened and operated three successful restaurants in Manhattan, all healthy and profitable multi-million dollar enterprises. He received excellent reviews from the New York Times, the Wall Street Journal, the Michelin Guide and Zagat Survey. He also participated in several TV cooking shows.
In 2017 he sold his three businesses and went on to join forces with the Clover Restaurant Management Group as the role of Director of Operations
